I'd look at either John Winters' boats (
www.greenval.com) or the
Minnesota Canoe Association (
www.canoe-kayak.org). Take a look at the
MCA Explorer for a good C-2 design. Winters' designs are a little less
conventional, but supposedly very good.
You might also look at Ted Moore's book "Canoecraft". The Redbird is a
very conventional, and extremely good 'Canadian' style boat.
Alternately, consider one of the CLC 'stich&glue' kayak kits. A much
quicker way to get on the water in a boat you built for probably less
money than building a canoe.
