300 lbs. sounds about right. But, I think paddling.net lists the
limit
for kayaks of similar dimensions as low as 250 lbs. So, you're gonna
be near the limit w/gear.
I can speak for the watertightness of the hatch. In the linked
pictures, I took a spill in the pictured rapids. All my stowed stuff,
clothes, food and camera, sans drybag, stayed dry as a bone. See:

The seat is the newer design, which can be adjusted up and down, back
and forth.
Nice pictures. The boat is really beautiful though I haven't seen it in
person. All the reviews are tops.
You mention the seat, is it really comfortable? I got an Scrambler with
the gray nonabsorbing seat that looks the same as in the Manitou and it
kills my back after a couple of hours. The Manitou's got a much higher
back though.
