John, I rarely eat sturgeon as I don't like fish generally. However
sturgeon is very, very mild. You can put some in a ziplock in the
fridge for three days, open it and no odor at all. I give my keepers
to folks who really enjoy fish. Some smoke 'em, some cook 'em other
ways. The little I've eaten I just roll in cornmeal and fry.

Sturgeon could be passed off as not a fish. Different texture, no bones,
cartilege fish. Very good eating, and great smoked. I rarely keep one, as
I think they are being hurt by the enviroment, etc. Plus we have a lot of
Russians poaching them for the eggs. Been several busts the last couple
years. Not big enough penalties to stop them. The caviar is going for
above $100 a pound and they get a $5k fine. And they are caught with a
couple hundred pounds of canned eggs. Russian Mafia is big in California.
