Hopefully simple questions on switch panel wiring. In which order
should the switch and fuse be from the main positive bus??

Either +ve bus - fuse - switch - appliance(s) or

+ve bus - switch - fuse - appliance(s).

Secondly conductor protection. I understand that if an insulated
cable is either on a cable tray or in a conduit, it does not need
further protection. If neither, then it should be an insulated and
sheathed cable.
Would appreciate confirmation.

Either way is fine, although there may be a slight preference to put
the switch closest to the supply - that way if the switch is off, the
fuse contacts are not "live". In any case, the fuse holder should be
wired with the supply to the rear (least accessible) contact.

Personally, I prefer circuit breakers, which effectively combine
switch and fuse in one unit. (and you don't have to carry spare fuses,
or fumble around in the dark t find them.)

If you are running a pair of wires to some equipment or light, it is
convenient (and probably good practice, and certainly neater) to use a
cable, but not essential.
